2 week hurdle

  Today is my 2nd week anniversary since getting back on the horse. I am struggling with the blandness of my diet, I always seem to get into a very narrow rut, eggs eggs eggs and cheese. I have spent the whole day searching for easy recipes that will give me some variety and hopefully allow me to stay on the diet. This diet is the only thing that works for me, and I truly desire to stay on it. I have ordered some low carb tortillas that will allow me a few ventures out of the box, my sister reminds me that I can cut those into triangles and fry them or back them and dip them into all kinds of good and tasty dips, including queso and guacamole, sour cream and onion and just plain salted... or just plain! I need to drink more water and I am craving some fresh fruit and vegetables. I'll have to research that a bit. My best chance is to make up a week's menu and put a variety of my favorites on it, giving myself hope for the next meal and the next day... that I won't rely only on a scrambled egg with cheese.
