I made some ice cream yesterday, using a recipe from an old Betty Crocker book. It called for 1/2 cup of sugar. I used a teaspoon of sugar, a couple of teaspoons of xylitol, a couple of teaspoons of stevia/erythritol combination, and 1/4 teaspoon of straight stevia. If I make it again, I won't need all that because it's actually too sweet. I had read some time back that combinations of sweeteners work better than a single one. That definitely seems to be the case. The recipe called for a tablespoon of vanilla. I substituted a tablespoon of maple flavor. Think I'll sprinkle some chopped pecans on it when I serve it.

I've read several articles that mixing sweeteners work best and if I remember right, some of the Low Carb Luxury recipes combined sweeteners.

It's really good and I ate 'way too much of it last night. Rolling Eyes I do need an ice cream maker if I'm going to do this very often, though. I just put it in a tall thin Tupperware thing and stuck it in the freezer.
