I searched for information about xylitol, and found a wide variety of opinions on the carb values, calories, effect on insulin, etc.

Some say that since it's digested further down the line, the insulin rise is insignificant; others say to count calories and carbs as usual.

Some figure it at 0 carbs/teaspoon; others count it as 4.

One source said that if one uses more than 60g, one should count 1/2 carb per gram. That sounds good to me. Since I'm unlikely to use 60g of the stuff, I'm going to count it as 0 carbs. Razz

60g seems like an awful lot. Can't imagine anyone using that amount.

Nor can I, Sandy. So, I'm going to assume that the modest amounts I'll use will be 0 carbs.

I wouldn't worry too much about it. Most sources say that sugar alcohols can be counted as 0 carbs. If it is a blend of xylitol and fillers then the carb count should be higher. I suspect the 4g number comes from a blend of xylitol and a filler.
