Speedy chocolate cake
I've been fiddling around with Mug Muffins, and came out with something fairly decent last night:
In a coffee mug, put:
1 Tablespoon cocoa powder
1 Tablespoon coconut flour
1/2 teaspoon baking powder
a few sprinkles of salt
1 teaspoon xylitol
(I would additionally use 1/2 teaspoon stevia/erithrytol next time.)
1-2 Tablespoons chopped pecans
Mix dry ingredients together with a fork, then add:
1 Tablespoon coconut oil
Stir together thoroughly with a fork. Place mug on a microwave safe plate, and put it in the microwave. Microwave at full power for 1 minute. The stuff will puff up and lop itself over the edge of the cup, but so far that's as far as it's gone.
If you have a good low carb frosting, it would taste good on these. I actually wrote this one down and plan to repeat the recipe.

That does sound good and easy. Where did you get your coconut flour? Can't say I've seen that. _________________

Oh, gracious, Paul! I don't even remember where I got the coconut flour. I just did a google search, and Bob's Red Mill has it, Amazon carries it, as does Tropical Traditions. I might have bought it at a local health food store. _________________
