I got a pound of kosher ground turkey thighs the other day when I ordered that kosher chicken. Last night I cooked some white rice and mixed it in with the ground turkey, along with some salt, pepper, garlic powder, chopped onions, and sage. I formed it all into four big patties/loaves/lumps and put them into a glass baking dish. I sprinkled each one with a bit of paprika for color, and put about a tablespoon of goose fat on top of each. I put the lid on the baking dish, and put it in the oven at 400 degrees for about an hour and a half.
It was really pretty tasty. I cooked enough rice for each patty/lump to contain one bread unit of carbs (per Lutz/Allen).
We ate two servings last night and we have two left over for tonight. _________________
