I decided a while back that I'm going to see if I can make some old favorite recipes low carb. Well...lower carb, anyway. I love tapioca pudding. The tapioca itself doesn't amount to much when divided six ways. Stay tuned. Razz

Tapioca pudding is Jim's favorite. Have not made it in years. Let us know how it comes out. Very Happy

I love tapioca too but only when it's still warm.

It's good warm or cold. Back in Germany my Oma would fix it as a soup for dinner. We called it "Froschaugensuppe, frogeye soup". I loved it, loved the way the little pearls felt in my mouth. I think she folded in some eggs, as it was a main meal.

Sandy, Dh wants it cold. Me? Warm or cold, I love it. Gigi, that's very interesting about how you served it in Germany. Did you use the bigger tapioca? I think it's called "pearl tapioca"? I have a box of that here that I've had forever. Must make it up some time. I bought it when I heard about the Mennonites who cooked the larger pearls all day in milk, then served it with banana. REALLY low-carb, I know. Back to my low-carb idea. . . Razz

I don't remember about the size of the pearls. I just remember how good they felt in my mouth. Smile

My son loves tapioca and yesterday, at the last minute, I decided to make him some and take it to his house when we picked him up. I told him he was lucky that it all made it there.

We had a kiosk at the mall that sold "bubble tea" It is also called tapioca pearl milk. Very interesting to be drinking something and then get this big pearl of tapioca.

I like the one on pp. 3/4 that looks like a brandy alexander. Let's see. . .cream, sweetener, some brandy flavor (do they make it?), and a dash of nutmeg. Now all I need is some black tapioca.
