Ingredients
6 large eggs -- slightly beaten
1/4 cup cream
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 cup asparagus -- cooked,cut in pieces
1 cup Swiss cheese -- shredded
1 tablespoon butter -- melted
1/2 cup chopped onion
1/2 cup red bell pepper -- chopped
Directions
Step: 1-Combine eggs, cream, garlic powder, salt & pepper, aspragus and 1/2 cup of the cheese; mix well.
-Mel tbutter and saute onion and red pepper until crisp-tender.
-Reduce heat to low; pour egg mixture over vegetable mixture in skillet.
-Cover, cook 16-19 minutes or until mixture is set.
-Sprinkle with remaining 1/2/ cup cheese.
-Remove skillet from heat.
-Cover; let stand 5 minutes or until cheese is melted.

-Per serving:5.7 minus 1.1 grams fiber=4.6 carbs & 17.2 grams protein
