Vegetable Scrambled Eggs

Ingredients
2 Tables. butter
1 c coarsely chopped zucchini
1/2 c shredded carrot
1/4 c chopped onion
8 eggs, beaten
1/2 tsp salt
1/4 tsp pepper
1/2 c shredded cheddar cheese
Directions
Step: 1in a large skillet, melt butter. Stir in zucchini, carrot, and onion. Cover and cook 2 minutes. Uncover and cook an additonal 1-2 minutes. Stir in eggs, salt, and pepper. Reduce heat to low, cook until eggs are set but still moist, stirring occasionally from outside edge to center of pan. Stir in cheese. Serve immediately.
