Restaurant Cheesecake

Ingredients
2 pkgs. cream cheese (8 oz. each)
12 pkts. Equal (or other sweetner of your choice)
3 large eggs
3 Tbsp. Lemon juice
1 1/2 tsp. vanilla
1/4 tsp. salt
3 cups sour cream
Directions
Step: 1Preheat oven to 350*. In large mixing bowl, beat cream cheese and sweetner until very smooth - about 3 mins. Add eggs one at a time, mixing well between each. Add lemon juice, vanilla and salt. Be sure to scrape bowl often. Blend in the sour cream just until blended.

Grease an 8 in. springform pan (or use a VERY Large pie plate! -- maybe 2 small ones). Pour batter into pan and set into a large roasting pan filled 1 inch with hot water. Bake for 45 minutes. Turn off oven but DO NOT OPEN DOOR. Leave cheesecake inside for 1 hour. Remove to a rack and cool to room temperature. Cover with plastic wrap and chill overnight. I got 10 generous slices!
You may put a nut crust under or top wtih raspberries sweetened with Equal and a bit of lemon juice.
