Status: Approved
NameFrench Silk Pie with a pecan meringue crust.
CategoryDessert
Serves/Yields8 pieces of pie
SourceScott
DifficultyEasy
Introduction
Note: I modified a couple of different french silk pie recipes, it is suppose to be french silk and it tastes great. But instead of the filling being really fluffy and creamy. The filling is thicker and a little more solid.
Ingredients
Meringue Crust:

3 egg whites, at room temperature
1/4 t. cream of tartar
1/8 t. salt
3/4 c. Splenda granular or use appropriate amount of liquid Splenda.

Pie Filling:
1 C. Splenda granular or use appropriate amount of liquid Splenda.
3/4 C. Butter
3 Squares {1 oz. each} unsweetened chocolate, melted and cooled
1 & 1/2 tsp. Instant Coffee
1/4 t. Cream of tartar
1 & 1/2 t. Vanilla extract
3 eggs

Directions
Step: 1Beat egg whites, cream of tartar, and salt until foamy. Gradually add splenda, beating until stiff. Fold in:
1/2 c. chopped pecans
1/2 t. of vanilla extract
Spoon meringue into a well greased 9" pie pan. Use spoon to shape, swirling sides high. Bake at 300 F for 1 hour. Cool. Set aside.

Beat splenda and butter in a 1 & 1/2 quart bowl until light and fluffy. Stir in chocolate, coffee, cream of tartar, and vanilla. Beat in eggs until light and fluffy, about 3 minutes. Pour into crust. Refrigerate until set, 3 to 4 hours.
Nutrition Information
With Splenda Granular Total Carbs for pie is 73. Per slice is just over 9 carbs.
With Splenda Liquid Total Carbs for the pie is 25. Per slice is just over 3 carbs.
