1 8 oz pkg cream cheese, softened
2 eggs
2 egg whites
8 pkts Equal plus two pkts
1 tblsp squeezed lemon juice
1 tsp almond extract
small container of whipping cream
small bag of plain almonds
Cooking spray
Directions
Step: 1Beat together cream cheese, eggs, egg whites, 8 pkts Equal, lemon juice and almond extract. Pour into muffin tins which have been greased with cooking spray. Bake in 350 degree oven for 35 minutes (until golden brown on top). Meanwhile, spread almonds on a cookie sheet which has been sprayed with cooking spray and toast them in the oven for about 7 minutes on each side until they have a nice toasted flavor. (You can't really turn them all over individually, but mix them around.)

Cool cheesecakes, remove them from muffin tin and chill in the fridge. Toasted almonds can be kept in a cool dry container and will retain their toasty flavor. Whip cream with 2 pkts of Equal. Serve cheesecakes with almonds scattered on the plate and a good dollop of cream on top. Lovely presentation, awesome indulgence.
