Asparagus-Tomato Stir-Fry

Ingredients
1 Tables. Butter
1 pound fresh asparagus, cut diagonaly into 1 1/2 inch pieces
4 green onions, but into 1 inch dianonal pieces
4.5 oz jar sliced mushrooms, drained
2 small tomatoes, cut into thin wedges
1 Tables. toasted sesame seeds
1/2 tsp grated lemon peel
1 Tables. low sodium soy sauce
2 tsp lemon juice
1/2 tsp sesame oil
Directions
Step: 1Heat a large skillet over med-high heat. Add butter, asparagus and onions. Stir-fry 3-4 minutes. Add mushrooms and stir-fry 1 minute. Stir in tomatoes, sesame seed, lemon peel, soy sauce, lemon juice, and oil. Heat thoroughly.

Nutrition Information
Total carbs per 1/2 c serving = 4 g. Makes 8 servings
