Faux Mashed Potatos

Ingredients
1 Head Cauliflower (13 carbs)
1 Stick Butter
2 TBS Heavy Cream (If necessary)
1/2 - 3/4 TBS Black Pepper
Salt to taste
Directions
Step: 1Steam or boil cauliflower until it is VERY soft (20 - 30 mins). Put it in a strainer or seive and mash as much of the water out of it as possible (this is very important or you'll end up with cauliflower soup!).

Whip the rest of the ingredients with the cauliflower and reheat. (The high quantity of pepper and butter in necessary to achieve the right potato flavor, but careful on the pepper - it goes from perfect to too spicy very easily)

It sounds sounds too good to be true but this is nearly indistinguashable from mashed potatos. I've served it at parties and no one has known! I desperately missed potatos when I started this diet (3 years ago!) and thought this up to help.
