Perfect Pancakes

Introduction
These are not to be believed. I always add a teaspoon or so of soy flour and wheat gluten to baking recipes to give it more of a "bread" texture.
Ingredients
2 eggs
1/2 cup ricotta cheese
1/4 cup vanilla-flavored whey protein powder
1/2 teaspoon baking powder
1/8 teaspoon salt
Any of these are optional
1/2 teaspoon vanilla extract
1 tablespoon splenda
1 teaspoon soy flour
1 teaspoon wheat gluten

Directions
Step: 11) Spray skillet with nonstick cooking spray and place over med. heat.
2)In mixing bowl whisk eggs and ricotta cheese until smooth.
3)Whisk in protein powder, baking powder and salt.
4)Drop tablespoons of batter onto the skillet. When bubbles appear on the surface are breaking and stay broken, flip to other side.
5)Serve with butter, sugar-free syrup or jelly, Splenda and cinnamon or mashed berries sweetened with Splenda.
