Ingredients
1 1/2 lb ground chuck
3 T dehydrated onion or 1/2 c chopped onion
2 t garlic powder
1 t salt
3 T red chili powder
1 t pepper
2 T paprika
1 1/2 T ground cumin
7 cups beef broth or bouillion
3 T cornstarch mixed with 1/3 c water (24g carb)
or 4 T masa* flour (23g carbs)
Directions
Step: 1brown ground beef in large saucepan with onions, garlic powder,salt, pepper, chili powder, paprika, and ground cumin. Add broth and reduce heat and simmer uncovered for one hour.

Mix cornstrach or masa flour with 1/3 cup water. Gradually add to chili mixture.

**** Most of you have the Atkins crepe recipe. By adding 2 Tbs of masa flour, it adds only 12 total additional carbs but a world of flavor. Crepes stuffed with a monterey jack cheese and onions topped with my great tasting chili makes a mock enchilada that's hard to detect from the real thing.
