Ingredients
1 morningstarfarms breakfast patty
1/4C Better n eggs or egg substitute
1 slice swiss cheese
1T Ajvar an eastern european red bell pepper/veggie relish which has tons of vitamins and is really delicious, you can get it easily in supermarkets in the ethnic food section. Otherwise use salsa or marinara.
Filling:
1pkg frozen spinach
12 onion chopped
t. oil
salt and pepper
seasonings to your taste
2oz feta cheese
Directions
Step: 1Saute the onions in the oil until soft, add seaonings and spinach, mix well, remove from heat and cool for 10 min. Add feta cheese and combine. Store in a container in the fridge for omelettes all week.
Omelette: Sparay a small skillet with cooking spray and turn on M heat. Nuke the breakfast patty for 30 sec. ONLY. Crumble in skillet, pour in the egg substitute. Cook over M heat until a spatula slides under the omlette easily (for me about 1 min if I turned on my pan while I was nuking my patty.) Flip your omlette, and put on the cheese slice, 1 to 1 1/2 T of filling, and fold it in half, flip it to the other side for 30 sec. (Just to get the other side hot). Slap it on a plate, spread on the sauce and eat.

If you like salty breakfasts instead of sweet this is the best and fastest breakfast you can have. I can make this thing up in 5 min flat. sometimes if I dont have the spinach mix on hand I just throw in any veggies I have left over, or somtimes just cheese. And I have to say, find the Ajvar, this stuff is very mediterranian tasting and counts as a veggie on WW.
