Lindakimy's Beef Roll Ups
Status: Approved
NameLindakimy's Beef Roll Ups
CategoryBeef
Serves/Yields6
DifficultyEasy
Ingredients
1 pint ricotta cheese
1 egg
2 tsp. garlic powder
2 tsp. onion powder
2 tsp. Italian seasoning
1 lb. shredded mozzarella cheese, divided
1 16-pz jar spaghetti sauce (I use Paul Newman's cause it is lower in carbs..read the labels)
1 lb. deli sliced raost beef (I buy this at Sam's...get the nice big slices - about 5" x 9")
Directions
Step: 1Preheat oven to 375 degrees. In a bowl, combine the ricotta, egg, garlic powder, onion powder, seasoning, and half the mozzarella. Mix well. Place a spoonful of mixture onto a slice of roast beef and roll up. I roll 'em up longwise - shorter width - and it isn't necessary to fasten these with toothpicks or anything. Repeat with remaining beef. Spread 1/2 cup of sauce on the bottom of a 9 x 13 inch baking dish. Place the beef rolls in the dish, seam side down. Pour the remaining sauce over the beef rolls. Bake, covered (I use foil), for 40 minutes. Add the remaining mozzarella cheese over the top and bake for an additional 3 minutes, uncovered, until cheese is melted.
Enjoy!
