Curried Cauliflower Saute and Soup

Ingredients
1 small head cauliflower
(2.7 gm per cup)
1 chopped onion
(11 gm per cup)
4 cloves garlic sliced
(4 gm)

olive oil or clarified butter
salt, pepper, curry
powder (at least 1/2 tsp)
to taste
1/3 stick butter (if using
olive oil above)
Directions
Step: 1separate cauliflower into
florets and steam until
almost tender. Meanwhile,
heat a cast iron frying pan.
Heat the fat. Saute onion and
garlic until soft. Add
cauliflower and spices to
taste. Cook until
cauliflower is soft. Add
butter and mix well. Serve
and enjoy.

If there are leftovers, make
curried cream of cauliflower
soup: per 1/2 C leftover
cauliflower, pour double that
amount of water. Heat water
in saucepan, add boullion
cubes (chicken or veggie) 1
cube per cup (or 1/2 tsp
boullion paste per cup). Add
cauliflower and simmer 10
min. Puree if desired (I
didn't bother) and add 2 Tbs
cream per serving.
