Ingredients
3 packages lemon sugar free jello
1 package any red jello
1 8 oz package cream cheese
2 stalks celery chopped fine
1/2 cup chopped pecans or walnuts
Optional (1/2 cup crushed pineapple--add carbs)
Directions
Step: 1Heat 3 cups water to boiling, dissolve lemon sugar free jello in boiling water. Put in large bowl...add cream cheese, either whisk or mix with mixer, I just use a whisk and it beats right in easily. Add chopped celery, nuts, and pineapple if you have chosen it. Add 2 1/2 cups ice, if you added the pineapple, or 3 cups if you didn't' Stir until ice is melted. Let sit in refrigerator about an hour until set. (the ice causes it to set quickly) Meanwhile, in another bowl, mix 1 package red sugar free jello with 1 cup boiling water, stir until dissolved, add 1 cup ice, stir until melted. Pour on top of lemon jello mixture. Refrigerate until set. This makes a big batch which will keep for a week in the refrigerator, or else the whole family can enjoy it. My family loves it.
