Terrific Thai Lettuce Wraps

Will serve 2 adults and 2 kids as a main entrTe not sure how many
it will make as an appetizer....probably depends on how much "stuff"
you put on the lettuce leaves.

Enjoy!
Ingredients
Head of small Chinese lettuce
a couple of breasts of chicken, (boneless & skinless)
Pam olive or butter flavored spray
salt and pepper
soy sauce
Splenda (one or two packets, depending on how sweet you'd like the sauce to
be)
1 tablespoon of low carb peanut butter
few drops of Tabasco sauce

Shredded mozzarella (any kind) cheese
Thinly sliced cucumbers
Thinly sliced mushrooms
Thinly sliced green peppers
Sliced hard boiled eggs
Sliced black olives
Directions
Step: 1Take a head of small Chinese lettuce, peel off layers of leaves and
stack and set aside. This head of lettuce is rather small - the
leaves are a little bigger than a woman's hand, kind of thick and
rubbery in texture compared to other types of lettuce but they
taste similar to romaine. You can get at any grocery store.
Take a couple of breasts of chicken, (boneless & skinless) and clean
them well and spray them with a little oil (Pam olive or
butter flavored spray, works well) salt and pepper them lightly and
set them aside.

In a small bowl, whisk together 1/4 cup soy sauce, some Splenda
(one or two packets, depending on how sweet you'd like the sauce to
be) and 1 tablespoon of low carb peanut butter (you should be able to
buy this at any good health food store)and a few drops of Tabasco
sauce for spice, to taste.

Take the chicken breasts and put them on the grill, basting them with
the sauce you made above, until they are cooked thoroughly (not pink
in the middle). Take off the grill and sprinkle lightly with sesame
seeds and finely chopped peanuts and cut into strips about an inch
wide and 2-3 inches long. Put on a plate or in a bowl.

In additional bowls put the following:

Shredded mozzarella (any kind) cheese
Thinly sliced cucumbers
Thinly sliced mushrooms
Thinly sliced green peppers
Sliced hard boiled eggs
Sliced black olives

Take a lettuce leaf, layer with chicken, cheese, cucumbers,
mushrooms, any combination of the items above, then wrap up one end
and fold in the sides and eat like a burrito.

The Cheesecake Factory serves an appetizer similar to this
I have modified it a bit to fit my low carb lifestyle.
These are pretty kid friendly, too.
Nutrition Information
Not sure on the carb count but it is very low. This should
probably not be eaten during the first two weeks of a starter carb
diet, though.
