Ingredients
Peel and slice eggplant into 1" pieces. Boil in 2" of water, until tender, about 15 min, and drain. Put 1/3 at a time in blender until pureed. Add:
1/2 teasp. garlic powder(1 Tabsp. white wine vinegar)(1 teasp. Dijon mustard)(Dash of Laurie's seasoned salt)3 Tabsp. mayo, (2 Tablsp. olive oil)1 or 2 drops green food color.Pinch of sweetnlow.
Directions
Step: 1You make it in the blender after its cooked. Make it on the weekend, also try sour cream and spinach dips, or Braunsweiger. Be creative.
