Ingredients
1lb meatloaf mix (beef,pork,veal)
1 egg
1/2 to 3/4 cup ricotta cheese
1/4 to 1/2 cup fresh grated parm cheese
assorted bell peppers minced
red onionor shallot minced
any herbs you like, I use fresh basil and garlic
mix and roll into mini meatballs, like big marbles
for broth:
6 cups homeade chicken stock
escarole if desired, cut into very small pieces, or spinach
salt and pepper

Directions
Step: 1make meatballs and bake at 350 for about 8 minutes. You will see the fat rendering away, but dont cook all the way through, bring stock to a simmer and add the meatballs. Let simmer until cooked through, I wouldnt add the greens until you want to eat, I think they get find of funny. I also served mine in a crock with cheese like french onion, Its real good
