Introduction
This recipe can be altered to taste seasoning wise, has less than 5 grams of carbs per serving, and is absolutely delicious!
Great when reheated as well. I usually bake about 3-4 lbs of chicken at once, then I reheat throughout the
week with different side dishes.
Ingredients
3-4 lbs chicken (legs thighs wings, variety pack, bone in)
16oz bag of regular dried pork rinds (or two 8oz, found in snack isle)
salt
pepper
paprika
parsley
touch of cumin
other seasonings to your taste!
Directions
Step: 1preheat oven to 350

wash chicken

blend pork rinds in food processor w/ seasonings
until it is consistant with a bread crumb texture. You can
also add different seasonings to your liking and taste)

coat chicken with pork rind coating.
the mixture should be dry, but makes sure it sticks to
chicken (you may wet a little w/water, but do not moisten
mixture..it is best when baked dry!!

cover with foil, and bake for about 1 1/2
or until chicken is done.
