Ranch Popcorn Chicken Bites

Introduction
I made this recipie up because I didn't want my daughter to eat those frozen chicken nuggets with the questionable fillings :)
Ingredients
1 whole chicken (roaster)
1/2 C Low Carb Bake mix
1 C Low Carb bread crumbs (or pork rinds)
1 PK Hidden valley ranch dressing (dry)
2 large eggs
1 tsp water
Zip lock plastic bag (gallon sized)

**You can save alot of time by buying whole skinless chicken breasts.
Directions
Step: 1Pre-heat oven to 325*

Beat 2 eggs with tsp water in seperate bowl. place bread crumbs and dry dressing into plastic bag and shake. Put baking mix into another bowl. Skin and cut up chicken into bite sized pieces.

First dredge chicken pieces in bake mix. Then wet chicken in egg mix. Throw chicken in bag. Shake it all up :)

Place chicken on cookie sheet. (If sheet isn't non stick, spray with non stick spray). Cook peices for 10 minutes *or until done.
