Cauliflower "Potato Salad"

Ingredients
1 16oz. bag frozen cauliflower
2 Tbsp. dried minced onions
5 hardboiled eggs
3/4 to 1 cup mayonnaise
3 Tbsp. prepared mustard
Salt and pepper to taste
* 1/4 cup green olives with pimentos sliced
Nuke cauliflower and onions for 10 minutes. Drain and cool. Chop cauliflower and add chopped eggs. Add other ingredients and mix well. Refrigerate. Serves 4-6

*green olives optional

I really enjoyed this salad but I felt if I added celery chopped fine and some green onion it would have a better flavor. It is amazing how you can fool yourself into thinking that these are potatoes.
