Chicken Salad

Ingredients
A big can of canned chicken (about 4 lbs). You can find this at most stores that sell in bulk like Sams or Costco.
4 nice size pickles
4 packets of splenda
4 small celery sticks
1 medium size onion.
 1 jar of real mayonnaise (not going to use all of it)You also need a food processor.

Directions
Step: 1Open and drain canned chicken and place in big bowl

Cut pickles and put in food processor and add the 4 packets of splenda. (the recipe calls for sweet relish, but you can make your own without all the added sugar). Process pickles until they have the consistency of relish.

Cut celery and put in food processor. Process until the celery has the consistency of relish.

Cut onion in 4 parts and put in food processor. Process until the onion has the consistency of relish.Add all these ingredients together and mix well.

Add mayonnaise to taste.
Add salt and pepper to taste.

You can tweak the recipe to your liking. This salad tastes great. You can eat it on top of a bead of lettuce and a few cherry tomatoes. You can also have it for breakfast on a piece of low carb bread or a low carb wrap.

Warning: Do not add tomatoes or lettuce to the salad. It gets very soggy.

Options: You can substitute tuna for the chicken. You can also cook your own chicken and make the salad without canned meat. Chicken breasts work better. Just broil them with salt and pepper or any other spices, then cut up in pieces and again use the food processor
