Mexican Chipotle Meatballs

1 pound of ground beef
5 boiled eggs
1 raw egg
1 ground cracker
1 minced chipotle pepper
1 can tomato paste
salt

Directions
Step: 1-Ever made meatballs? All you do is mix the meat with the ground craker and the raw egg and form small meat balls, usually 1.5 inches in diameter but it depends on your tastes. I think it might hold just as well without the cracker, but we all have packets of saltines somewhere.

Put a small amount of oil in a skillet and fry about 4 - 6 meatballs at a time, untill the outside gets nicely toasted. This usually means the inside is cooked (feel free to dissect one and check).

Sauce: mix the diced chipotle pepper with the can of tomato paste and a little bit of oil. Boil/fry this mixture for around 5 minutes and then add 3 cups of water. Also add the boiled eggs (if your really skilled, you know how to boil eggs in the sauce. I dont so I do them separately). Latter add the meatballs. Some people will prefer a thicker sauce, but if its watery dont worry, that's how its traditionally served. If you dont like it that way use less water or reduce it at high heat.

Serve this over boiled cabbage, on its own or with any thing else you can think of.

About chipotles

What are chipotle peppers? Well, its roasted (to the point of burning them) jalapeños. You can usually find a can of these (mixed in "adobo") at your super market for 3-4 dollars and unless you have a major tolerance to spicy food, this can will last you a long time.
