Pork Tenderloin
1 onion
Light Olive Oil
Butter
Salt
Pepper
Rosemary
Lemon Pepper
Directions
Step: 1cut pork ternderloin into 1/2 to 3/4 in. slices. In a casserole dish, sprinkle a light coating of light olive oil. Sprinkle some rosemary on the bottom of the dish along with a sprinkling of salt. Lay your chops flat in the coated dish and sprinkle (to taste) lemon pepper seasoning and some pepper. Flip each chop, it should be lightly coated with the olive oil from the bottom of the dish and lightly sprinkle a bit more salt. Flip chops back over. Place dish in center of oven, choose Broil at 350 degrees. Bake 15 min, flip chops, Bake another 15. Chops should be cooked through, but still juicy and tender. On the stovetop, melt about 1T. butter in a frying pan on med-high heat. Cut your onion the way you like it and saute in pan. Lightly salt and lemon pepper them, to taste. Once onions are glossy and barely starting to brown, spoon some of the juices from the chop dish, add about 1 Tbs Heavy Whipping Cream and saute just a minute more. Pour over finished chops and you have a great meal!
