Pepper Steak

Ingredients
4-5lbs of beef (bottom round or even top round are good)
1/2 large onion
5 peppers (any color but orange and yellow are good)water
~1/4C soy flour
8 bullion cubes
ground pepper
Essence of Emril original
olive oil
Cauliflower
Directions
Step: 1First cut meat into 2 inch slices 1/2 inch thick and pat dry and dust with seasoning and peper. Brown meat in pot with a little olive oil. Remove and just set aside for now. Next saute the onions until they soften up and then return meat. oh and slice the onions so you have strips. cut up pepper into strips. Add onion, add with onion for about 3 minutes. Return beef to pot and now cover it to with water to about 1 inch of covering everything (as the onions and pepers cook down, everything will sink under the watter. add the bullion cubes (if you can find low or no carb beef broth that is even better) let simmer for about 45-60 min. Thicken by mixing soy flour with water and add to pot and make sure to bring up toa boil to cook the flour taste away. If not think enough add mor soy flour. But mix it with water first. Do not put flour directly into hot liquid. it will lump up. Season with more Essence and Ground pepper if you like. I ate this over finely chopped couliflower. You can also add some worstishire sauce or soy sauce for flavor but remember to count the carbs!!
