2 Large Firm Red Tomatoes, Sliced 1/2 inch Thick
4 Slices Bacon, Cooked & Crumbled
1/4 Cup Chopped Red Onion
1/2 Cup Crumbled Feta Cheese
2 Tablespoons Fresh Chopped Garlic
2 Tablespoons Fresh Chopped Parsley
1 Tablespoon Extra Virgin Olive Oil
Salt & Pepper
Directions
Step: 1Brush both sides of Tomato Slices w/Olive Oil
Place on Cookie Sheet
Season w/Salt & Pepper
Evenly sprinkle remaining ingredients on each slice

Bake at 350 for 10-15 mins

Serve warm or at rm. temp.

You needn't use the extra virgin olive oil in this recipe or in any recipe that involves the oil being heated as the extra virgin olive oil loses its extra flavour when it is heated. Just keep it for salad dressing and things like that.
