Introduction
A cross between crepes and pancakes!
They are an amazing way to have a low carb breakfast, or dessert! I've eaten them with low carb ice cream, or come low carb whipped cream and berries!
Ingredients
1/2 package of softened cream cheese
4 tablespoons of sour cream
2 eggs
1 tablespoon of cinnamon
2 tablespoons of low carb maple syrup
4 tablespoons of wheat gluten (OR soy flour)
1 tsp of baking powder
1/2 tsp of baking soda

Topping Options: Berries, whipped cream, butter, low carb maple syrup, nuts, or low carb ice cream as a topping!
Directions
Step: 1Blend all ingredients well with a wire whisk. It may be easier if you melt the cream cheese slightly in the microwave first.
Cook in a skillet with pam, just like any pancake, and serve! They are a cross between crepes, and pancakes, and are so comforting!

I made these last nite and they were wonderful ,I added a little 1/2&1/2 to thin them out tho.that way they were big enuf to wrap some blueberries in and I put some whipped cream on top for a superb dessert or breakfast. YUM
