Not to be missed! | | Ingredients | | 3 tablespoons of oil
4 chicken breasts, skinned
1 small onion, finely chopped
200g chopped walnuts
500ml boiling water
2 tablespoons (30ml) tomato puree (tomato paste)
1 teaspoon instant coffee (for colour)
3 tablespoons (45 ml) Splenda (or 6 UK tablets)
salt and pepper
juice of 1 lemon
1 cauliflower
4 tablespoons of low-carb yoghurt | | Directions | | Step: 1 | For the Fesenjun:
1. Grind walnuts in a food processor till very finely chopped. Place to one side.
2. Take a large pot, and fry chopped onion in a tablespoon of oil until browned but not burnt.
3. Add walnuts to pot and stir for 1 minute.
4. Add boiling water to pot and simmer on a low heat for an hour.
5. In a seperate pan, fry chicken breasts for 5 minutes on each side until brown. Then add chicken to the simmering walnut sauce.
6. Add the tomato paste, Splenda, instant coffee, salt and pepper.
7. Bring to the boil, then cover and simmer on a low heat for 35-40 minutes until chicken is fully cooked. Add the lemon juice in the last 5 minutes of cooking.
For the Cauliflower Rice:
1. Cut cauliflower into chunks, and chop in a food processor until it reaches the consistency of rice.
2. Add 2 tablespoons (30ml) of water and microwave on high for 4 minutes in a covered container.
3. Distribute between 4 plates.
Top each pile of "rice" with a chicken breast, sauce, and a spoonful of yoghurt on the side. Greek Yoghurt is best.
