Introduction
I make this for my mate once a week, he raves about it.
Ingredients
4 large boneless/skinless breasts
1 can or jar each of spaghetti sauce (four cheese and garlic)
1 lb of ground beef
2 green peppers
1 red onion
8 oz mushrooms (fresh is better)
1/2 cup parmasan cheese
4 slices provolone cheese
1 tsp italian seasoning
1 tbls minced garlic
Directions
Step: 1Brown beef in skillet, drain, then combine both cans of sauce, parm cheese, and italian seasoning. Heat on low for about 15 mins. Set aside to cool. Heat skillet on med-high with 2 tbls of olive oil. Slice peppers, onion, and mushrooms. Add to skillet with garlic and sautee till tender. Transfer to a dish to cool. In same pan, add a little more oil and cook chicken about five minutes on each side. In a 9x13 baking dish layer a little of the sauce with a little of the pepper and onion mix. Lay the cooked chicken on top and cover with rest of vege mix and about 2/3 of remaining sauce. Top with provolone cheese, sprinkle with a little italian seasoning,cover, and put in 325 oven for 30 mins. I serve the remaining sauce over steamed california style vegetables.
