Introduction
this is a versatile recipe i put together which can be used as a meal in
itself or served alongside other dishes. You can litarally put anything
in it and it will taste great, this is quite basic but very, very tasty!
No ordinary salad, even my lettuce loathing hubby loves it.
Ingredients
Basic salad ingrediants -

1 cos lettuce
1/2 round or iceberg lettuce (round is best)

(lettuce should be washed, dried and torn with hands instead of cut as this prevents wilting)

handful of raw baby spinach
2 large vine ripened plum tomatos (de-seeded and diced)
4inch piece of cucumber (diced)
4 spring (green) onions - trimmed ends, washed and sliced

meats -
2-3 chicken breasts
6-8 slices smoked bacon

garnish -
2 hard boiled eggs
1 cup grated coloured cheddar

dressing-
20ml single cream
0-10ml water
1 tbsp boursin (boursin is like a garlic cream, if you cannot get this then mix 2 cloves crushed garlic with dressing instead)
1tbsp cream cheese
salt and freshly ground pepper
Directions
Step: 1cook chicken right through and bacon until crispy in grill and boil eggs.

meanwhile place lettuce, spinach, cucumber, tomato and spring onions into very large salad bowl.

Take all ingredients for dressing except water and mush in a pestal & mortar or whisk toogether (you will not get this dressing smooth, do not worry) once combined add water to your preferred consistancy. set aside.

once chicken and bacon are cooked dice chicken and crumble bacon and place into warm oven to keep its heat.

add dressing to salad a little at a time and toss with hands (messy but most effective) until all salad is covered with a light coating, discard any unused, too much will spoil the end result. now apply the same process with the grated cheese.

chop eggs and mix through salad then remove meats from oven and toss these into salad also.

Serve immediatly whilst meats are still hot for an excellent contrast of hot and cold.


Nutrition Information
not too sure but i reckon its around 8-9g net carbs per portion if your eating as a meal for 2.
