Introduction
Here's my Mexican Lasagne creation.
Ingredients
I'm a little of this, little of that kind of chef, so forgive me if I'm not all that accurate.

About 1.5 pounds ground beef
1 cup beef stock (or water)
1 packet of taco seasoning
1 can Black soy beans, rinsed
1 chopped onion
1 can diced tomatos (or salsa, or fresh chopped tomatos)
mexicheese blend, shredded
low carb tortillas or Carbdown Flatouts (a low carb pita bread of sorts)
Directions
Step: 1
I brown about 1.5 pounds of ground beef & drain the fat. Add 1 cup of beef stock, one of those taco seasonings packets, 1/2 the chopped onion, black soy beans & let simmer about 5-10 minutes.

Mix tomatos with the other 1/2 of the onion, a little cilantro & lime juice to make a quickie salsa (or just use store bought salsa).

Slice tortillas into strips, about the width of lasagne noodles.

Butter the bottom of a casserole dish, lay a layer of tortilla "noodles" on the bottom (doesn't have to totally cover every inch). Sprinkle on a layer of cheese. Spoon on most of the ground beef mixture, then spoon on the salsa. Sprinkle on another layer of cheese. Lay one more layer of tortilla "noodles", then beef mixture, then cheese on top. Bake at 350*F for about 1/2 hour, till cheese is nice & melted.

Enjoy as is or add a dollop of sour cream on top of your slice.
