Olive Oil Lemon Fried Chicken

Introduction
Very easy and delicious meal. Is very light for being fried.
Ingredients
2-3 chicken breast with skin and 2-3 thighs with skin
1 Cup Extra Virgin Olive Oil
1/2-1 Cup Olive Oil for Frying (look for Olive Oil labeled "for frying")
3-4 tbsp lemon juice
chopped parsley
Directions
Step: 1Combine olive oil and lemon juice in a zip lock bag. Rinse and dry chicken and add to the bag making sure the chicken is coated evenly. Refridgerate for 2- 3 hours
Remove chicken from marinade and dry completely with paper towel
Heat olive oil for frying
fry chicken in pan for 12-15 minutes per side until done (if using a deep fryer follow directions)
Remove chicken and season to taste. Sprinkle with parsley and a squeeze of lemon juice
