Italian Zucchini Boats
Status: Approved
NameItalian Zucchini Boats
CategoryVegetable
SourceMe! Ok, really dbf has to take the credit.
DifficultyEasy
Prep. Time10 minutes
Cook Time25 minutes
Introduction
My dbf made this up with fresh ingredients from his garden & even
homemade tomato gravy from his own tomatos. Quite the yummy dish!
It's also versatile as you can put all kinds of goodies in the boat. :)
Ingredients
*1 med/large zucchini, ends chopped off & cut in half lengthwise
*tomato gravy (that's "spaghetti sauce" for us non-Italian folks)
*ground sweet italian sausage, broken up/crumbled & cooked in a skillet
*mozzerella cheese
*grated parmesean
Directions
Step: 1Take a spoon & remove the seedy part of the zucchini halves & place on a cookie sheet (cut side up).
Spoon some gravy into the hollowed out boat part of the zucchini.
Place a layer of sausage in the boat, then top with shredded mozzerella & a sprinkle of parmesean.
Bake in the oven at 350*F for ~20 minutes, then turn on the broiler till the cheese is slightly browned and nice & bubbley.
Let sit for a minute to cool & then enjoy!
