Crustless Artichoke and Ham Pie

Ingredients
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 small onion, chopped
2 cloves garlic, minced
1/4 pound of Canadian bacon, cubed
1-12oz package frozen artichoke hearts, thawed and quartered
1/4 cup grated cheese
4 eggs beaten
salt and pepper to taste
onion powder to taste
Directions
Step: 1Saute' onion, garlic, and artichokes in a little olive oil until tender. Meanwhile, combine the eggs, cheeses(including grated), ham, salt, pepper, and onion powder in a medium sized bowl. Add the egg mixture to the artichoke mixture and gently stir to combine. Pour into a greased pie plate. Add some ground black pepper to the top. Bake uncovered in a 350 degree oven for 45 minutes or until cooked through with top browned. This was originally a quiche-type recipe with a bottom crust but I changed it to low carb. It can also be made with pepperoni instead of Canadian bacon, and any kind of shredded cheese you like. I added the garlic and salt and pepper to the recipe. The original called for a whole large onion. I changed it to the 1/2 small onion with onion powder, and it was just as good. It's great with a green salad and is good cold too. Hope you like it!
