Preheat oven to 325 degrees F
1/4 cup soya powder (not soy flour)
6 T Water
2 T Cream
1 egg yolk (or 2 if you like)
3/4 cup grated cheddar cheese
2 egg whites (or 3 for higher souffle)

Beat egg yolk well
Add egg yolk to soya/cream/cheddar (make sure it's only lukewarm)
Place mixture back into freezer to cool more while you ...
Beat the egg whites until stiff peaks.
Take 1 T of egg whites and stir into the cool mixture.
Then fold remaining egg whites into cool soya/cream/cheddar/yolk mixture. Don't stir, fold.
Spoon mixture into a 1 quart souffle dish or into a loaf pan or a throwaway loaf pan.
Gently place into preheated oven.
Bake for 40 minutes. Baking less at higher temp gives a "runny" souffle. Baking longer at 325 gives a "dryer" souffle.
Receipe also holds up if you want to add vegetables -- add them to bottom of souffle before spooning in mixture. If vegetables are finely cut, they can be added when the cheddar cheese is added and the souffle will still rise.
