2 8 oz pkg cream cheese
4 bars Hershey's unsweetened baker's chocolate
sugar substitute equiv to 2 cups sugar (I use generic spoonable and it takes approx 1 bottle and a half. This should be to taste anyway. Some like it sweeter, some not.)
1 tbs vanilla
1/2 cup pecan pieces
Step: 1Place chocolate bars in microwave with cream cheese long enough to soften chocolate. (1 1/2 min to 3 min depending on microwave) With elec mixer, beat until smooth. Add vanilla and sweetener, continuing to beat until smooth. Taste mixture to determine sweetness is satisfactory. If not add more sweetener. When satisfied with sweetness, add pecans, mix and refrigerate 8 hours in a foil lined dish. Lick beaters and bowl. =P After fudge is ready, remove from foil lined dish and cut into squares.
