6 baby portobella mushrooms
1 6oz. can crab claw meat
1/2 cup mayonnaise
1/2 cup shredded swiss cheese
1/2-1 tsp. Old Bay seasoning
Step: 1Remove the stems from the mushroom caps. Mince 2 cleaned stems and discard the rest. Mix together the crab meat, mayo, cheese, minced stems and seasoning and set aside. Saute the mushrooms in butter, cap side down, approximately 10 minutes or until tender. Line a broiler pan with foil. Place mushrooms, cap side down, on foil and stuff with crab mixture. Sprinkle a little parmesan cheese on top if desired. Broil until the stuffing is lightly browned and heated through.
Absolutely delicious with a lean, juicy steak!
