Ingredients
*1/2 pound (or more, if prefered) sausage, or bacon.

*1/4 C. chopped green bell pepper.

*1-1/2 teaspoons onion powder

*5 eggs

*4 oz. sliced mushrooms, drained (optional).

*1/2 C. shredded Cheddar cheese.

Directions
Step: 1Grease a 6 cup muffin tin. (If using a 12 cup muffin tin, be sure to fill empty muffin spots w/ water, so pan won't scorch.) Preheat oven to 350 F.In a skillet over medium heat, cook the sausage, pepper, and onion powder until sausage is brown. (Rinse, if desired.) Spoon mixture into a bowl, and cool slightly. Stir in beaten eggs, and mushroom. Spoon mixture evenly into the muffin tin. (DON'T FORGET TO GREASE TIN!!) Sprinkle with cheese. Bake 20 minutes, or until egg is set.

*Note...there are also a couple grams of fiber in this, so carb count is 2 per serving, max...IF that.
