Ingredients
1 green pepper diced
1 onion diced
about a dozen eggs
1 pkg. deli ham , the long rectangle shape
1/2 c. parmesean cheese
salt and pepper to taste
Directions
Step: 1In large skillet break open eggs over low-med heat add onions, peppers , and parmesean cheese. Let cook until eggs are looking close to done, then stir up the mixture and remove from heat while still runny. Place about 1 tbsp of the mixture and roll it up like a fajita. Place in a 9x13 pan and cook in 400 degree oven for about 30-35 minutes . Simply delicious. Long time tradition in my family for holiday mornings.
