Ground lamb over eggplant

1 pound ground lamb or beef (even mixes are best).
1 large onion
1-2 spoons of minced garlic
1/2 tsp ground cinamon
1/4 cup balsamic vinegar
1 Large eggplant (peeled)
salt, pepper, oregano
1/2 stick butter
1/2 cup sliced mushrooms
Step: 1Peel and slice the eggplant in half. Then try to make several long thin slices of eggplant. Place them in a microwave safe container with the vinegar and some salt and microwave for about 4 minutes. Then let it sit for at least another 4 minutes.

-Drain the eggplant well and toss it into a frying pan with a quarter of a stick of butter. Sautee it on high heat untill it starts to turn golden.

- Put the eggplant aside (you may nibble on a slice to taste, though), rince the pan and then use it to fry the chopped onion and garlic using the remaining butter. Add your spices and once the color changes (it starts to caramelize) add your ground meat (lamb, beef or equal portions).

-Once its browned your set. Just place a few strips of fried eggplant on a plate, cover it with a small heap of ground lamb and serve.


Go ahead and put some cheese on top. It makes it even better.

Mixing the lamb with a crushed tomato and 1 of those really small cans of pate already gives you a very different flavour
