Introduction
I sometimes top these with fresh grated Parmesan. I have also used spinach in the veggie mixture - it's always great. Guests think it's a complicated dish when it's really simple ! Enjoy !
Ingredients
6 slices Black Forest Ham
3 shallots, chopped
1 clove garlic, chopped
2 c mushrooms, chopped

1 T sour cream
1 T butter
6 eggs
salt and pepper
Directions
Step: 1Spray a muffin tin with Pam. Line each opening with a slice of ham -the ham will come up over the top edges.

Saute' the shallots, garlic and mushrooms in the melted butter until soft. Remove from heat and stir in sour cream.

Divide the veggie mixture into the ham-lined muffin tins and sprinkle with salt and pepper to taste. Each tin should be about 1/2 full.

Crack an egg into each of the 6 tins and sprinkle with more pepper.

Bake at 375 for about 15 minutes ( or until eggs are desired doneness ).
