2 chicken breast, halved, skinned and boned
1/2 cup shredded carrot
1/2 cup shredded zucchini
1/4 tsp tarragon leaves
1/4 tsp garlic powder
1/2 cup white wine or chicken broth
1/4 cup water
1 tsp soy flour
1/4 tsp pepper
1/4 cup whipping cream
Step: 1Pound chicken breast lightly until about 1/8-1/3 inch think. In a small bowl combine carrot, zucchini, tarragon, and garlic powder. Mix well. Divide mixture evenly between chicken breasts. Roll up and secure with toothepicks. In a large skillet, place chicken rolls; add wine(broth) and water. Bring to a boil, reduce heat, cover and simmer for about 10-15 minutes. using a slotted spoon remove chicken to heated serving plate. cook remaining liquid until reduced by 1/2, stirring constantly. Using a wire whisk, stir in flour, salt, and pepper. Cook until sauce starts to thicken, stirring constantly. Stir in Whipping Cream and cook an additional 3-5 minutes. or until thickened. Spoon over hot chicken and serve.
