Beggar's Chicken

Serves/Yields4 to 6
/2 tsp salt
2 Tables. low sodium soy sauce
1 T dry sherry or water
1 tsp sesame oil
3 1/2 pound whole frying chicken
1/2 pound ground pork
2 Tables. minced green onion
dash ground ginger
enough artificial sweetener to equal 1 tsp sugar
1 Tables. sherry or water
2 tsp low sodium soy sauce
8 oz can bamboo shoots, drained
Step: 1In a small bowl, combine salt, 2 Tables. soy sauce, 1 Tables. sherry(water), and sesame oil. Brush chicken inside and out with mixture. Place in a large bowl, cover and refridgerate 1-2 hours. In a 10 inch skillet, stir-fry pork 2 minutes, drain. Add onion, ginger, sweetener, 1 Tables. sherry(water), 2 tsp soy sauce, and bamboo shoots. Stir-fry 1 minute. Remove from heat and let cool. Stuff chicken with cooled mixture. Close cavity with metal skewer, if necessary. Wrap chicken lightly with foil and place in a baking dish. Bake 300-degrees for 3 hours. Unwrap chicken when ready to serve.
