|1 lb sausage
1 cup Atkins bake mix
any kind of hard cheese (cheddar, monterrey jack, etc.)
can mild jalepenos
|Step: 1||Mix sausage and bake mix together. Set aside.
Slice cheese into thick sticks width wise.
Crush pork skins.
Take a ball of sausage mix in your hand and roll then flatten in your
palm. (Best to use rubber gloves. Lay a jalepeno in the center of
sausage and place a stick of cheese on it. Roll sausage around the
jalepeno and cheese and seal. Roll in crushed pork skins and put in
small cookie sheet with a little lip on it. Bake at 350 degrees for
at least 30 mins. Check and if the sausage does not look completely
done, bake a little longer. Enjoy!
