My Version, no bread all veggies
1 Lb Eggplant
1 Lb Zucchini Slices
1 Can Tomato, crushed
2 Tbsp Fresh Basil, chopped
2 Clove Minced Garlic
3 Tbsp Balsamic Vinegar
Salt and Pepper, to taste
2 Sprays Olive Oil Spray
1 Tbsp Parmesan Cheese, shaved
Step: 1Peal the eggplant and slice into long 1/2' strips
Slice the zucchini lengthwise also
Mix the items 4 thru 7
Spray the veggies down, both sides
Grill or broil on one side, turn, grill then, coat with the tomato mixture
