1/4 C oil
1/4 C red wine vinegar
1 Tables. Dijon mustard
enough artificial sweetener to equal 2 tsp sugar
1 minced garlic clove

2 1/2 c diagonally sliced celery
1 c cherry tomatoes, halved
4.5 oz jar whole mushrooms
1/2 large green pepper, cut into 1x1/2 inch pieces
3 cu coarsely shredded cabbage
8 oz summer sausage or salami, cut into strips
Step: 1In a container with a lid combine the dressing ingredients. Shake to blend well. In a large bowl combine celery, tomatoes, mushrooms, and pepper. Pour dressing over vegetable mixture. Toss gently to thoroughly coat. cover and refridgerate about 30 minutes. Before serving add cabbage and toss. Arrange salad evenly onto 4 serving plates and place 1/2 c sausage on top of each salad.
Serve immediately.
